1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh spinach, chopped

2 cloves garlic, minced

1 teaspoon lemon zest

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Olive oil for drizzling

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Baking Dish: Lightly grease a medium-sized baking dish with olive oil.

Mix the Beans and Pesto: In a large mixing bowl, combine the cooked white beans and basil pesto. Stir gently to coat the beans evenly.

Add Vegetables and Seasoning: Fold in the halved cherry tomatoes, chopped spinach, minced garlic, lemon zest, and red pepper flakes. Season with salt and pepper to taste.

Layer the Ingredients: Transfer the bean mixture to the prepared baking dish, spreading it out evenly.

Add Cheese: Sprinkle the shredded mozzarella cheese on top of the bean mixture, followed by the grated Parmesan cheese.

Drizzle Olive Oil: Lightly drizzle some olive oil over the cheese for added richness.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbling and golden brown.

Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
