White Cheddar & Spinach Chicken Burgers

Ingredients
  

1 pound ground chicken

1 cup fresh spinach, finely chopped

1/2 cup white cheddar cheese, shredded

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper, to taste

4 hamburger buns

Olive oil, for grilling

Fresh spinach or arugula, for topping

Slices of tomato, for serving

Optional condiments: mayonnaise or aioli

Instructions
 

In a large mixing bowl, combine the ground chicken, chopped spinach, white cheddar cheese, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, oregano, salt, and pepper. Mix until just combined, being careful not to overmix.

    Divide the mixture into four equal portions and shape each one into a patty about 3/4 inch thick.

      Heat a grill or skillet over medium heat and add a drizzle of olive oil to prevent sticking.

        Once hot, place the chicken patties on the grill or skillet. Cook for about 5-6 minutes on one side without moving them, until golden brown. Flip the patties and cook for another 5-6 minutes, or until the internal temperature reaches 165°F (75°C).

          During the last minute of cooking, place the hamburger buns cut-side down on the grill to toast lightly.

            Remove the chicken burgers from the grill and let them rest for a couple of minutes.

              Assemble the burgers by placing each chicken patty on the bottom half of a toasted bun. Top with fresh spinach or arugula, tomato slices, and any desired condiments. Add the top half of the bun.

                Serve immediately with your choice of side, such as sweet potato fries or a fresh salad.
